Chlorophyll copper complexes (E141)

Chlorophyll copper complexes - a natural food additive (E141). It has a characteristic green tint, but completely odorless. Its main application is the dairy industry. In pure water and water-alcohol liquids the dye dissolves completely. Food gives bright greenish resistant color.

The method of obtaining E141

You can find many names of food additives, widely known among them: chlorophyll copper complexes, chlorophyll copper complex, E-141, E141, English names sodium and potassium salts, chlorophyll and others.

Chlorophyll copper complexes are obtained from a special group of edible young plants: alfalfa herbs, broccoli, nettle. The dye is extracted using universal solvents (primarily alcohol and copper salts). For the most efficient extraction, other solvents will be needed: dimethyl ketone, dichloromethane, methyl alcohol, carbon dioxide, hexane.

Features of food supplements

Food supplement changes shade to dark brown during the onset of a chemical reaction (hydrogen completely absorbs magnesium). With the dye E141 was made additive E140. E141 are characterized by an increased indicator of resistance to fluctuations in temperature and light resistance. Chlorophyll for a long period of time can remain the same color - emerald greenish. The active ingredient of the additive shows good resistance in an acid-base environment.

The dye has unique features and performs a number of functions: tints food and mixtures in green; gives a fascinating view of the finished product; able to restore the natural color of the product, lost after long processing processes; extracted from plants, therefore, is considered environmentally friendly and safe.

E141 successfully produce and sell Germany, Denmark, Russia and India.

Composition E141

Inside its group, the dye consists of two main elements: the copper complex of chlorophylls and the acids of the copper complex of chlorophyllines. The first component in appearance is similar to the stretching wax of a green-blue or persistent green hue. It is extracted from algae and some young green plants with the help of solutions and salts of copper.

The second element E141 in its structure is similar to the powder, which has its own color palette: bright green, light green, dark green.

These two elements are part of the food additive, they are soluble in water and do not dissolve in vegetable oils at all. The 1st component of E141 reacts to the acidic environment, and the 2nd - to the alkaline one.

Spheres of application

The scope of application of the dye is very large, covering the main industry. Because of its resistance to temperature fluctuations, the substance is used in the manufacture of dairy products: ice cream, savory dairy desserts and cakes. The primary task of chlorophyll is to color a certain list of products in a beautiful saturated color.

Argued that chlorophyll is widely used to create dietary supplements that restore hemoglobin levels (bring it back to normal). But this point of view is not confirmed by science, because when the human body receives the active ingredients of food supplements, they are completely not involved in raising the level of hemoglobin.

Separately, the active ingredients of a food additive are used to color various foods and products in cosmetics and pharmaceuticals. The dye is added to vegetable and fruit twists, pastries, to expensive varieties of Dutch cheese, to ointments, suppositories and tinctures (pharmaceuticals), to soaps, oils and creams (cosmetic products).

Demanded E141 is often included in the following products:

  • chewing gum;
  • instant soups;
  • preservatives;
  • mayonnaise.

Some of the products are allowed to paint only according to the Codex Alimentarius, which describes in detail the features of the food coloring process.

E141 resolution in Codex Alimentarius
Coloring is allowed in the Codex AlimentariusDosage (indicators)
Pickled CucumbersShould not exceed 300 milligrams per 1 kilogram in pure form or in combination with other coloring agents
Dry broths and soupsUp to 400 milligrams per kilogram per finished product
Some of the GMP cheesesShould not exceed 0.5 g / 1kg

The substance should be used for the preparation of confectionery dishes, jellies, jams, marmalades, low-calorie dishes, colorful and delicious drinks (liqueurs). Also E141 is one of the best care products for the oral cavity and teeth.

Benefit and harm

The positive qualities of chlorophyll as an additive: natural origin, the absence of a negative impact on human well-being, used in many sectors of the country, high-quality dye.

The substance has a positive effect on the health and general health of a person, if it enters the body as part of dietary supplements (normalizes the level of hemoglobin in the blood). But if the dietary supplement enters the body with food, then it will be of little use.

It remains an open question about the effect of a food additive on reducing the unpleasant smell from the skin in certain types of diseases, including cancer. American scientists are convinced that chlorophyll tablets completely eliminates the smell of the skin in case of ileostomy disease. It is believed that chlorophyll is able to bind mutagens of cancer cells, thus it can serve as a means of preventing cancer. The effectiveness and effectiveness of the food additive E141 in the fight against ileostomy and other types of cancer has not been proven to date.

Regarding the harm of E141, the negative effect on the body has not been established. Scientists have conducted a lot of research and tests and came to the conclusion that if you do not exceed the daily norm of a food additive, then there is no need to worry about the risk of negative effects.

Health Impact of Dietary Supplement

Chlorophyll in the form of a dietary supplement is safe for humans and is permitted in Russia, Ukraine, America, almost all countries of the Commonwealth of Independent States and Europe. The food industry primarily uses E141 to change the color of certain products in the form of raw materials.

There are organizations that are responsible for the use of food additives and indicate the allowable limit (norm) of the additive in food. This is due to the fact that the food additive contains a heavy metal - copper. Because of this, the dosage of this active substance in food is small.

Other studies have shown that copper is not absorbed by the body at all, so there can be no toxic poisoning. Natural dye does not harm the vital organs of the person (no side effects).

When heating a food product in which there is E141, copper has a tendency to be released, so do not neglect the daily dosage of the active substance, so as not to poison with toxins. The maximum dose of a dietary supplement per day is no more than 15 milligrams per 1 kilogram of body weight. Neglecting the daily intake should not be to avoid unintended consequences.
